Taitung is one of Taiwan’s most famous regions for sugar apples, known locally as “shijia.” The fruit is exceptionally sweet, fragrant, and creamy in texture, often described as tasting like natural custard. Thanks to the warm climate and fertile soil, Taitung’s sugar apples are considered among the best in Taiwan and are widely enjoyed fresh or sold as seasonal specialties in local markets.

These are thick, short rice noodles made from locally grown Taitung rice, giving them a naturally springy and chewy texture. The dish is commonly served in two styles: in a savory pork bone broth or “dry” with minced pork sauce. It is typically topped with aromatic bonito flakes (katsuobushi) and fresh bean sprouts, creating a balance of rich, savory, and umami flavors.
