"Dried meat (Thit Gac Bep)"

Dried meat (Thit Gac Bep) literally means the meat, which can be buffalo, pork or beef, is hung in the kitchen until it is well-dried. It is a unique speciality of the Black Thai people of Sapa in particular and people in NorthWestern Vietnam in general. They marinate the meat with many kinds of seasoning and spice then dry it by the smoke in the kitchen for a period of time. It is the smoke from the kitchen that gives the dried meat a distinct smell like no other. The meat is dark brown on the outside, but inside the meat is full of stunning bright pink-red. The first bite may be a little tough, but you will savour the mix of sweet, smoky, salty and spicy afterwards, which makes dried meat have unique flavour from others.

"Sturgeon/ Salmon sour hotpot"

Possessing temperate weather all year round, Sapa is a favourable place for salmon and sturgeon to exist and grow. Hence salmon or sturgeon sour hotpot is a familiar dish to anyone visiting Sapa. The highlight of the hotpot is its broth. It's a combination of several vegetable types, spice and fish head. The ingredients are relatively similar to a common sour but fresh flavour of the caught fish will bring an elegant and delicate flavour to the broth. Sour hotpot is usually served with fresh local vegetables besides fresh sliced-fish to make it a perfect meal. Enjoying a sour hotpot mixed with a bit spicy from fresh chilli with pretty coldness in the Sapa’s evening will surely pamper your hungry stomach.

"Grilled chicken with green pepper "

This special dish was originally created by a chef in a local restaurant in SaPa: Hai Lam Restaurant. The chicken fed by local people in Sapa which has a special flavour and sweetness will be marinated with signature green pepper sauce, then wrapped in silver paper and grilled until the meat is medium-cooked. The heat and all flavours will remain inside the silver paper, which helps the chicken smells really aromatic when opening. Tao Meo is a name of popular and local wine of H’mong people. As the name refers, this wine is made from fruits of Tao Meo tree - a kind of tree grows naturally on Hoang Lien Son Mountains.
